Cut Sheet Consultation
Set the scene: you've committed to buying a quarter cow or a half cow, and are receiving an email from the butcher with a blank cut sheet. Most of these cut sheets will lack any semblance of instructions or explainers, and if you don't know what to ask for you will likely take home less of the animal, often ending up in the compost.
This package includes:
A 60-minute consultation, guiding you through your specific cut sheet and advise on your choices for each part of the animal
If you don't currently have a planned bulk purchase, but just want to discuss general strategies for sourcing, or even cooking more broadly, that's fine too!
